Our Story
Port Stephens Luxury Picnics & Proposals began as a dream wrapped in sunshine, salt air, and a love for creating unforgettable moments.
Aimee Parkinson, the creative mind behind the business, spent years as the Event Manager at Middle Rock Holiday Resort.
There, she honed her craft—planning and executing hundreds of group getaways, weddings, and family events with warmth and precision. But deep down, she knew she was destined to build something of her own—an experience-led brand that blended her love for luxury styling with her passion for people.
That opportunity arrived when Aimee and her husband Parko purchased their dream property, a unique coastal escape now known as
Aimee’s at Anna Bay.
With six self-contained units, a lush garden setting and resort style feel, Aimee & Parko created a space for groups to relax and reconnect, it quickly became a hub for milestone celebrations, retreats, and long-overdue reunions.
Inspired by the joy their guests experience during these special stays—and a desire to showcase more of what Port Stephens has to offer—Aimee launched Port Stephens Luxury Picnics & Proposals.
What started as intimate picnics styling soon blossomed into a full-service luxury event offering: dreamy proposals, hens parties, birthday celebrations, elopements, bridal showers, and group picnics for locals and travelers alike.
Each setup is thoughtfully curated to reflect the natural beauty of Port Stephens—whether it’s toes-in-the-sand at sunset or beneath the gumtrees in a private garden. With carefully chosen textures, florals, and colors, paired with gourmet grazing boxes and optional extras like champagne towers or our mobile beach bar Aimee’s on the Rocks, we create more than a picnic—we create a memory to treasure.
